Ingredients

For the Cake:

  • 1 ½ cups (190g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • ½ cup (115g) unsalted butter, softened
  • 2 large eggs
  • ½ cup (120ml) heavy cream or plain yogurt
  • ½ cup (120g) mashed fresh strawberries
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tbsp lemon zest

For the Strawberry Glaze:

  • ⅓ cup (80ml) fresh strawberry purée
  • 1 cup (120g) powdered sugar
  • 1 tbsp melted butter
  • Fresh strawberry slices for garnish

Instructions

  1. Preheat Oven: Set to 350°F (180°C) and grease a round or loaf cake pan.
  2. Mix Butter & Sugar: In a large bowl, beat butter and sugar until light and fluffy.
  3. Incorporate Wet Ingredients: Add eggs one at a time, then mix in mashed strawberries, cream, and vanilla extract.
  4. Prepare Dry Ingredients: In a separate bowl, whisk flour, baking powder, baking soda, salt, and lemon zest. Fold this mixture into the wet ingredients.
  5. Bake: Pour batter into the pan and bake for 35–40 minutes until a toothpick comes out clean. Let cool completely before glazing.
  6. Make the Glaze: Whisk together strawberry purée, powdered sugar, and melted butter until smooth.
  7. Finish & Serve: Drizzle glaze over the cake, letting it flow naturally. Garnish with fresh strawberry slices.
